Healthy Spelt Crepes
Ingredients
- 1 1/2 cups whole wheat or spelt flour
- 1/2 tsp Himalayan or sea salt
- 1 Tbsp organic sugar (skip if you don’t want sweet crepes)
- 1 Tbsp aluminium free baking powder
- 2 eggs
- 1 Tbsp coconut oil
- 1 1/2 cups dairy free milk (I like to use coconut milk or homemade almond milk)
Yields about 20 crapes (depending on the size of your pan)
Directions
- Mix all ingredients with a mixer or a blender until smooth
- Pour 1 large soup ladle on a non-stick pan and with your hand spread the batter evenly
- when bubbles appear flip the crepe over and cook the other side
- repeat until batter is over
