Healthy Spelt Crepes

Ingredients

  • 1 1/2 cups whole wheat or spelt flour
  • 1/2 tsp Himalayan or sea salt
  • 1 Tbsp organic sugar (skip if you don’t want sweet crepes)
  • 1 Tbsp aluminium free baking powder
  • 2 eggs
  • 1 Tbsp coconut oil
  • 1 1/2 cups dairy free milk (I like to use coconut milk or homemade almond milk)

Yields about 20 crapes (depending on the size of your pan)

Directions

  • Mix all ingredients with a mixer or a blender until smooth
  • Pour 1 large soup ladle on a non-stick pan and with your hand spread the batter evenly
  • when bubbles appear flip the crepe over and cook the other side
  • repeat until batter is over
