Healthy spinach filling
- 1 package fresh spinach (or Swiss chard*)
- 4 garlic cloves, minced
- 250 grams of organic goat feta cheese
- 2 Tb almond meal/flour
- salt and pepper
- pinch of nutmeg
- 1 tsp olive oil
- handful of pine-nuts (optional)
Wash spinach thoroughly and put the leaves on a paper towel to dry. Cut the leaves coarsely.
In a wok put: 1 tsp oil, cut-up spinach leaves and minced garlic. Stir well until all liquid has evaporated completely.
remove from stove and place in a medium bowl. On top of the bowl break the feta cheese with your fingers to small pieces, add the spices.
* if using Swiss chard cut the white part out and use only the green.
Use as a filling in crepes, burekas, homemade pastry, quiches, etc.
