Immune Boosting Stir Fry

This is a great immune boosting stir fry that the entire family will enjoy!

Made literally in 30 minutes, it is healthy, delicious, kid-friendly and quick.


1 onion, peeled and thinly sliced

3 cloves garlic, peeled and chopped

3 carrots, peeled and cut they way you like

2 stalks celery

1 Tb coconut oil/olive oil/red palm-oil

1 Tb low sodium tamari soy sauce

1 Tb raw honey

a handful chopped fresh coriander or parsley

1 lb skinless, boneless chicken breasts, cut into thin strips OR for a vegan option, 1 cup cashew nuts

Spices: sea salt, cumin, turmeric, black pepper and paprika to taste


Stir fry the onion, garlic, carrots and celery in the oil.

Meat option: Add the chicken and stir fry for a further 3-4 minutes.

Non-meat option: Roast the cashew nuts in a broiler for 5 minutes and when ready (they should be lightly brown) add to the stir fry.

Add the honey and the tamari sauce and stir-fry for further 3-4 minutes. Vegetables should be still crisp and not too soft.

When cooked, toss some chopped coriander over the top.

Serve with brown rice or other whole grain your family enjoys.

Cindy, ya, faster cook and bring back the sweet meomeirs.Felvinc, ya, the taste was greatNancy, I use the baking tray and put inside oven to grill it.Bakeling, lazy to write the recipe, i just use the normal ingrediants like shallot, garlic, lengkuas , fresh kunyit and serai, blend it and tasted with salt, sugar and add some coriander powder, thats all.Mia, pandan has a very aroma smell..
